Healthy Meal Options

Tonight's Dinner:

Grilled Mahi Mahi with Mango Salsa

Mango Salsa:
1/2 TB Olive Oil
1 C Mango, peeled and cubed
1/2 C Red Onion, diced
1-2 Tb Ginger
1/4 C Lime Juice
2TB OJ
1 TB White Vinegar
2 TB Brown Sugar

Combine and cover in fridge until ready to serve

Grilled Mahi Mahi

Rub with salt and pepper.  Grill for 4-5 minutes per side.

Top with Salsa

I served with Wild Rice and Balsamic Butter Asparagus.  (I try to use vegetables that are in season, and being early spring, asparagus is my go to).  Here's the link for the Asparagus recipe:
